Soil and slope

The terroir

The Premiers Crus lie on fairly uniform brown limestone soils between 350 and 380 m, facing east and south-east; they are marlier in Les Hervelets. Lower down, at the foot of the slope, the soil mixes limestone and marl.

Memory of the place

A little history

Fixin, pronounced “Fissin”, absorbed the hamlet of Fixey in 1860. The monks of Cîteaux came to rest at the manor of La Perrière, in the middle of their clos. In the Parc Noisot, a former officer of the Imperial Guard had François Rude’s statue of Napoleon awakening to immortality erected.

The style

In the glass

Deep purple, with violet, blackcurrant and morello cherry, and musky, peppery notes. Tannic in its youth, it rounds out and gains breadth after a few years in bottle.

At the table

Braised pork, rib of beef with parsley, slow-cooked poultry; Comté or Époisses.
